Our No bake Chocolate Peanut Butter Protein Balls are one of the best healthy snacks! They're super quick & easy and are perfect for on-the-go breakky bites or just a low calorie snack to keep in your tote bag.

INGREDIENTS

  • 1 1/4 cup Mejool dates (pitted)
  • 1/4 cup peanut butter (we use Byron Bay Peanut Butter Smooth)
  • 3/4 cup rolled oats
  • 1 teaspoon chia seeds
  • 2 tablespoons of cacao
  • 2 table spoons chocolate protein powder ( we love Tropeaka Chocolate Protein Powder)
  • Sprinkle of salt

METHOD:

If your dates are a bit dry, put them in a small bowl and cover with boiling water. Soak for 10 minutes, then drain and pat dry.

 

Place the dates in a food processor with steel blades and pulse until the dates are broken down to smaller bits. Then add the dry ingredients and pulse to combine. At this point the mixture will look like crumbs but if scooped together and rolled in your hands, it should hold together easily. If the mixture is too dry, add a little more peanut butter. If its too sticky, add some more oats.

Roll the mixture into medium sized balls ( you should get around 14 ) and enjoy immediately (they will be soft and slightly warm, but so delicious!) or refrigerate for 10 minutes and allow your protein balls to set. 

Any leftovers ( as if you'd have any! ) can be kept in the fridge for up to 1 week or frozen for up to 3 months. Just allow them to thaw in the fridge overnight.
